  • Fresh parsley: 1 tablespoon, finely chopped
  • Lemon juice: 1 teaspoon
  • Garlic clove: 1 small, finely minced
  • Salt: 1/4 teaspoon
  • Black pepper: 1/4 teaspoon freshly ground
  • Extra-virgin olive oil: 1 tablespoon (optional, for richness)

Instructions

Prepare peppers:
Wash and dry the bell peppers. Remove the stems and seeds then slice into even strips.
Arrange peppers:
Arrange the bell pepper strips radiating out from the center of a large serving platter leaving space in the middle for the dip bowl.
Make dip:
In a medium bowl combine Greek yogurt chives parsley lemon juice minced garlic salt and pepper. Stir well to blend. For a smoother dip add olive oil and mix until creamy.
Serve:
Transfer the dip to a small serving bowl and place it in the center of the platter. Serve immediately or cover and refrigerate until ready to serve.
