- Fresh chives: 2 tablespoons, finely chopped
- Fresh parsley: 1 tablespoon, finely chopped
- Lemon juice: 1 teaspoon
- Garlic clove: 1 small, finely minced
- Salt: 1/4 teaspoon
- Black pepper: 1/4 teaspoon freshly ground
- Extra-virgin olive oil: 1 tablespoon (optional, for richness)
Instructions
- Prepare peppers:
- Wash and dry the bell peppers. Remove the stems and seeds then slice into even strips.
- Arrange peppers:
- Arrange the bell pepper strips radiating out from the center of a large serving platter leaving space in the middle for the dip bowl.
- Make dip:
- In a medium bowl combine Greek yogurt chives parsley lemon juice minced garlic salt and pepper. Stir well to blend. For a smoother dip add olive oil and mix until creamy.
- Serve:
- Transfer the dip to a small serving bowl and place it in the center of the platter. Serve immediately or cover and refrigerate until ready to serve.
