Ingredients
- Dry Ingredients: 2 cups (250 g) all-purpose flour 2 teaspoons ground ginger 1 ½ teaspoons ground cinnamon ½ teaspoon ground cloves ¼ teaspoon ground nutmeg ¼ teaspoon salt 2 teaspoons baking soda
- Wet Ingredients: ¾ cup (170 g) unsalted butter melted and cooled 1 cup (200 g) packed dark brown sugar ¼ cup (60 ml) unsulphured molasses 1 large egg room temperature 1 teaspoon pure vanilla extract
- For Rolling: ⅓ cup (65 g) granulated sugar
Instructions
- Preheat oven:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Mix dry ingredients:
- In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, salt, and baking soda.
- Mix wet ingredients:
- In a large bowl, whisk melted butter and brown sugar until smooth and glossy.
- Add molasses etc:
- Add molasses, egg, and vanilla extract to the butter mixture. Whisk until well combined.
- Combine mixtures:
- Gradually add the dry ingredients to the wet mixture, stirring with a wooden spoon or spatula until just combined. Do not overmix.
- Shape dough:
- Scoop 1 ½ tablespoon-sized portions of dough and roll each into a ball.
- Coat dough balls:
- Roll each dough ball in granulated sugar to coat. Place balls 2 inches apart on prepared baking sheets.
- Bake cookies:
- Bake, one sheet at a time, for 9–11 minutes, until cookies are set at the edges and tops appear crackled but centers are still soft.
- Cool cookies:
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
