Strawberry Cheesecake Overnight Oats (Printable Version)

Creamy oats with layers of fresh strawberries and graham cracker crunch, ready after a night in the fridge.

# Components:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk, dairy or unsweetened plant-based
03 - 1/2 cup plain Greek yogurt or dairy-free yogurt
04 - 2 tablespoons cream cheese, softened
05 - 2 tablespoons maple syrup or honey
06 - 1/2 teaspoon pure vanilla extract
07 - Pinch of salt

→ Strawberry Layer

08 - 3/4 cup fresh strawberries, diced, plus additional for garnish
09 - 1 teaspoon fresh lemon juice
10 - 1 teaspoon maple syrup or honey

→ Topping

11 - 2 graham crackers, crushed
12 - 2 tablespoons chopped pecans or walnuts, optional

# Directions:

01 - In a medium mixing bowl, whisk together oats, milk, Greek yogurt, cream cheese, maple syrup, vanilla extract, and salt until smooth and well combined.
02 - In a separate small bowl, combine diced strawberries with lemon juice and 1 teaspoon maple syrup, tossing gently to distribute flavors.
03 - In two mason jars or lidded containers, alternate layers beginning with half the oat mixture, followed by half the strawberry mixture. Repeat with remaining oat and strawberry portions.
04 - Cover containers tightly and refrigerate for a minimum of 6 hours or overnight, allowing oats to hydrate and flavors to develop.
05 - Just before serving, top each jar with crushed graham crackers and additional fresh strawberries. Garnish with chopped nuts if desired.

# Expert Tips:

01 -
  • You prep it once and eat it for days, which means more time sipping coffee instead of scrambling in the kitchen.
  • It genuinely tastes like cheesecake but won't leave you feeling sluggish or guilty afterward.
  • The texture contrast between creamy oats and crunchy graham crackers hits differently every single time.
02 -
  • Soften your cream cheese before mixing or you'll end up with tiny lumps that never fully incorporate, which I learned the hard way on my second batch.
  • Don't add the graham crackers until you're actually eating—they're your crunch insurance, and if you add them to the jar the night before, they'll surrender completely to the moisture.
03 -
  • Use a whisk when combining the base instead of a fork or spoon—it actually breaks down the cream cheese faster and creates a smoother texture.
  • If you forget to soften your cream cheese, just cut it into tiny pieces and let them sit in the warm oat mixture for a minute while you prep the strawberries and everything comes together.
